Happy Birthday Trevor!

Hubby turned a quarter century old! 
I think that means our insurance is suppose to go down now right? 

My family flew down the help us celebrate and we had an awesome busy weekend! 

First we did a family dinner at our favorite little Mexican restaurant. 




We also tried out a new laser tag place. It was a blast and I can't wait to go back! 
We played for about two hours and it was intense! It was in a warehouse and there were two teams. We would play different games like capture the box and elimination games.

Then we also had people over to our house for a bbq.
 We went all out on celebrating my amazing husband birthday and he deserved it. 
He works so hard all the time and I am so proud of him.

Horseback Riding

Trevor took me horseback riding last weekend. 
I've been asking him for a long time and he finally took me! 

We just rode around in a field but it was my first on a horse when it was running and it was exciting and scary! Hoping to get some more practice in soon!

Baked Southwest Egg Roll Recipe

For Superbowl Sunday I tried out a new recipe I found on pinterest here.

I was a little nervous because I'm not the greatest at cooking, but they were actually super easy to make and very yummy!




INGREDIENTS

  • 2 cups frozen corn, thawed
  • 1 can black beans, rinsed and drained 
  • 1 (10 oz.) package frozen chopped spinach
    • I used Cilantro instead of spinach 
  • 2 cups shredded Mexican cheese
  • 1 (4 oz.) can diced green chiles, drained
  • 4 green onions, chopped
  • 1 tsp. ground cumin
  • 1/2 tsp. chili powder
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 tsp. cayenne pepper
  • 1 package egg roll wrappers (about 24 total)

10 Random Things


10 Random Things to share with you today.... 
  1. I miss the rain. A lot. I guess that means once an Oregonian always an Oregonian. Or something along those lines.
  2. I have never changed a diaper. True story.
  3. I could eat beans and potatoes for every meal. Mashed Potatoes are my favorite.
  4. I dislike Valentines day. Lucky Trevor.
  5. I sometimes wish I was born in the 1800's so I could be a pioneer.
  6. My dream job is to be a stay at home mom.
  7. My dog often runs into things such as couches, walls, and people because she is always looking behind.
  8. Last weekend I had a 4 year old tell me my toilet paper was backward. I was really confused at first, and then realized the roll wasn't rolling in the RIGHT direction for her preference hahaha!
  9. I have two different ears. Literally. If I hold them out to the sides, you can see that all the inside cartilage maze is completely different. Maybe one day I'll take a picture and show you.
  10. I and the rest of my family is obsessed with the show Duck Dynasty and can often be heard quoting the Robertson's or ending a sentence with "jack".

2012 Christmas Decorations

This was the first year I had my own house to decorate for Christmas and it was a lot of fun. 

Last year before I moved my mom let me take a few of her old Christmas decorations so that helped tremendously.  Christmas decorations can be expensive!

My mom made this tree skirt for me last year. It is reversible so next year it will look like I have a new one! 

Special ornament

We don't have a mantle so I had to get creative...

This is the first year I didn't go with my family for our annual Christmas tree hunt. Every year my family heads up to the mountains to find a "natural" tree, go four-wheeling, shoot guns, and cook hot dogs over the open fire. I missed out on this year, but I still got a Oregon tree! My dad sent us a tree on a load of lumber that was going to a nearby job site! 

Can't have Christmas decorations without deer antlers :)


I got the inspiration to make this glitter reindeer from here on pinterest. It was super easy and I love the way it turned out. Now only if I had a mantle to display it from... 

This year Trevor and I started our first Christmas tradition. We each got each other a special ornament that represented something that happened during the year. I got Trevor a boxer dog ornament to represent adding ruby to our family and he got me a beautiful church to represent our marriage (even though we didn't get married in a church, it was still cute and I love it!)

Personal Goals

I've never really done New Years Resolutions and I don't want to call these resolutions. 
They are just personal goals. 
Things I should work on regardless what year it is. 


  1. Read the bible more/improve my relationship with Jesus
  2. Drink more water
  3. Take more pictures (one day I hope to do a 365 day photo project, not this year though)
  4. Go on more dates with my hubby
  5. Travel to a new place
  6. Do more crafts (I have to put my new craft room to good use)
  7. Take Ruby for more walks
  8. Be more physically active (we might be joining a gym this week...)
  9. Improve my gardening (last summer I only grew tomatoes and this summer I want to be a bit more ambitious)
There is no 10 :) this is my list and I could only think of 9 things.
